During transition, the Hungarian dairy-processing sector has undergone dramatic restructuring. Foreign investors have led this restructuring by acquiring larger processing plants, rationalizing production and reducing employment. They have instituted more formal contracting agreements, promoting the growth of a select number of medium-sized dairy farms and excluded micro-producers. The latter cannot meet quality control requirements and produce largely for informal marketing channels. © 2001 by The Haworth Press, Inc. All rights reserved.
