The underlying principles of acoustic scanning/acoustic microscopy are reviewed, underpinning a discussion of the operation and application of acoustic microscopy and scanning to food materials. The construction of a versatile scanning acoustic platform (VSAP) capable of imaging over a wide range of scales, from centimetres to micrometres, is described in detail. Applications of the technique to the study of meat, food emulsion stability, and in-vivo study of plant cells are described. Future developments in conjunction with optical techniques (acousto-optics) are also reviewed. © 2013 Woodhead Publishing Limited All rights reserved.
